Christmas is just around the corner and everyone is probably just as busy as I am in making a holiday lists – gifts, activities and food! Since health has been the utmost priority for the past couple of years due to the pandemic, our family has been focusing on living a healthy lifestyle, which includes preparing more nutritious dishes.

There are just too many amazingly healthy dishes in my mind right now, but I am going to share with you one of my tastiest recipes. I’ve come up with this Easy and Healthy Potato Muffins.  Perfect for busy moms like me during the busiest holiday of the year! This yummy muffins can be served for breakfast or enjoyed as an appetizer, snack, or side dish.

For this recipe, I use US dehydrated potatoes, it is made from premium potatoes in a more lightweight and compact form.  I am thankful that I discovered US dehy because it saves so much of my time! No more peeling, boiling and mashing fresh potatoes. It’s not just a healthy alternative, it has a great number of applications too, you’ll be surprise on how US dehy potatoes can work magic in a number of dishes!


Ingredients:

  • 200g US Dehydrated Standard Potato Granules
  • 2 large eggs
  • 1.5 cup Water
  • ½ teaspoon Iodized Salt
  • 10g malunggay (moringa) leaves, finely chopped
  • unsalted butter for greasing

Preparation:

  1. Preheat oven to 200 °C
  2. In a medium size bowl, whisk together all the ingredients
  3. Grease the muffin tray with butter
  4. Scoop the mixture into greased tray
  5. Bake for 20-25 minutes until golden brown

 

This recipe makes 24 pieces of muffins. Trust me, they are so good fresh from the oven! However you can also warm them up in the microwave for 15 seconds! They are crispy on the outside and soft on the inside with just the right amount of flavor. If you love potatoes, you’ll definitely love this!

Healthy Potato Muffins

Did you know that Potatoes are nutrient-dense vegetables? A 148g of potato (with skin on) contains 110 Calories, 26g of Complex Carbohydrates and 27 milligrams of Vitamin C.  They are also a good source of Potassium, Protein, Fiber and Vitamin B6. They do not contain fat, sodium and cholesterol plus it’s gluten-free!

I make it a point to include potatoes in our meals. There are so many dishes you can make with them and they go with just about any cuisine. Potatoes are easy to cook with, too. Grilled, baked, roasted, mashed, fried, microwaved, boiled – you name it!
